Just purchased a "new" to me 2350 Pursuit WA, and I am 99% sure the 20 Gal holding tank has never been used. Is it even feasible to change this a FW tank? My thinking is to mount a small showerhead on the back of the T Top for a post dive rinse....
I am semi handy, and can read directions...especially if forced and my wife is watching , so I think I can probably do most of the work myself.

There can be diff materials and construction between a holding tank and a fw tank, but not necessarily. I like your idea, where you are headed with this, with or without the wife watching. If you have access to the 20-gal tank (strapped in the bilge, under a floor plate, whatever) I’d suggest tossing it and replacing with a clean/new fw tank.
If you decide to use the existing tank for fw, I suggest three things; sanitize it, sanitize it, and then sanitize it.
If the water tastes funny, you should have cleaned it better. Change the tank, the material that the tank is made out of might not be "cured" and could contaminate the fresh water that you are carrying even if it is for showering. It would probably have that "garden hose plastic" smell I would guess. Maybe not. Check and see if a new tank is feasible in price and then make your decision.
Get a couple of sunshowers. Don't go messing up a good boat..
I agree. Think about this carefully, it's not going to help when it comes time to sell the boat. And if it came with a holding tank, what was connected to it? A marine head? What will you do with the head? Won't you or your guests miss it?
It would be easier to buy a sunshower as suggested or even a rigid tank for extra fresh water and you would know it was sanitary. "Bladder" tanks are also available that can be placed in odd shaped spaces and connected to a pump and shower.
It has never had a marine head, and we are just planning on using a porta potty. Still, it does make better sense to just carry a solar shower...following the KISS method.
I just hated the thought of wasted space...not that much room in the boat to begin with, but freshwater does need to be fresh.
I can see us moving up to a 25-26 in a couple of years...that 2 footitis sure is contagious!
If I'm reading this right, the tank was put in during construction, the first owner opted NOT to have a head, therefore it was NEVER used. If it's the same polyethylene material as the water tank's are, why not modify a few fittings and use it?

FWIW, most of the people I know only use the FW tank for washing purposes. Potable water is better brought aboard in bottles for taste and health reasons.

I have mounted a small bait pump in the bottom/side of a 4 gal bucket.
I have about 6' leads, wired to the spare sw. on my dash, and 5' garden hose.
This all fits in my 175 aquasport console. Makes for a great "little" FW washdown.
Doesn't require dismantling the oriq. plumbing.

Grady W has it right. It was "Marine Head Ready", with a holding tank, pumpout, and plumbing to the W/A cabin, but never put into use. It would not be used for drinking water, just a shower, although I am sure some of that water gets in your mouth.
When I am on the boat again, I am going to look to see if it is easily removable. I contacted Pursuit about details on this model, and they did not have much to say...just basic specs, nothing detailed. It is 15 years old, but in pretty good shape, and at the right price to see if my family will actually get into boating..well, at least as much as I want to get into it. I thought the shower would be a nice amenity to add for my wife to rinse off the salt water. Wife Happy = More Boating!!
On a related note, how much water would you need for 5 "Navy" showers?...no soap on a rope comments please.
BTW "Todd" sells a "Fitting relocation kit" which may serve your purpose well.
I'm pretty skimpy with the water on my boat. I freeze all my ice in plastic bottles and use those for cleaning. Cooler water is put to use as well- Here doggy doggy.....I can get a couple uses out of a 5 gallon sunshower, I wouldn't exactly call them showers but they do the trick. You can make the 20 last a weekend if you just use it to wet yourself and rinse.
I'm thinking of mounting one of those 40 gallon blue barrels in the corner of my back deck. The plan is to be able to use it as a livewell on the daytrips or as a water tank for my long weekends. And for trash on the trip home. :-)
My dog drinks out of the toilet all the time and it doesn't cause her any problems. But seriously I would do it in a second. If it smells clean, it is clean. Run a little bleach though just for extra caution. Nothing like being able to rinse off after swimming or diving. Rinse the salt off the windshield, rinse your reels, your glasses when they get all salty. It's right there. on, under pressure, ready to squirt all day. Once you have it you'll never have a boat without it. My boat is an inboard with the pump and plumbing right near the engines. the first 30 -40 seconds of spray is nice and roasty toasty warm. I always get the first shower.
