I just looked at the website and saw pics of that splashwell (and saw the door installed in the video)... that looks like a REALLY low and open transom. My 175 Scout can back down in 2-3 without getting too much water in, but I have a higher transom and big, pluggable deck scuppers as well.

As for food storage, I have two integrated 94 quart coolers aboard (one as a seat in front of console, and one under the leaning post), but if we are just going for a cruise I plug the livewell and fill it with ice to make cleanup faster when we get back, although we have loaded up them all for full day ventures or to have cold drinks reachable from the swim platform. I store dry goods (chips, cups, napkins, etc) under the console which almost has enough room for my 6'5" self to sit inside of).
