I did a search and didnt come up with much on fast center consoles. When we go fishing it is usually 1-2ft and very smooth. For this reason what are some fast ccs that could get us out to ours spots. I know of some:
Fountain
Island Runner
Donzi
Dakota
ect.
... any others?
I've shown 55knts on my 26 Island Runner full fuel and two guys on twin 150 OptiMax's... You can get twin 200 on the 26..... peeling the bugs outta my teeth
Kind of matters what you consider fast - as well as what else is important to you. Ride Quality, Hard Core Fishing Platform, Creature Comforts, Storage, etc. not to mention power preference. If you are interested in a hardcore fishing machine and 53-55 mph is "fast" enough for you then check out my 2003 25 (28 LOA) Contender with twin 200 HPDIs that is for sale on the Trading Dock.
my 27 Whaler with twin 250's will hit 61mph. I think it is fast and in 2 foot seas like you mentioned, you would not even feel it. You would however feel the hull lighten as the 240 gallon tank emptied in about 4 hours!!

HEy SWFLNav, What props are your running? I can only see 40 on my cape wit the same engines.
Where do you fish that it's usually 1-2 and smooth? Indian River? Lake Ivanhoe?
My experience is that there are _very_ few days between September and April that it's 1-2 and smooth off the east coast of central florida.
YMMV.
As other people have asked, what do you consider fast? I think anything that can cruise comfortably at 40MPH is fast. Stuff in the water pops up real fast when you're moving 40MPH. There are MANY center consoles that can cruise at 40MPH when enough power is attached to the transom.
Im running the Mercurys SS 4 bladed props.... If only I had the 3 bladed prop.....
What pitch? I have used Mirage 17s and 19s with about the same result. 40-42mph
Thats a good question, I'll have to go look.... The Island Runners run on the V and not on the pad of the hull maybe thats has something to do with it. My cruise is 38 -40knts and getting 2.9mpg off the smartcraft gauges, thats in 2ft chop.
