Default Yamaha 250 electrical question

Well I noticed my motor has been acting weird lately. It's will sometimes trim up while the motor is running without me touching anything. It also sounds like the motor is making a noise like it's trimming up or down (although the motor doesn't move) when I turn the key/power off for the motor. Any ideas?

Sounds like a bad trim switch probably the one under the cowl. The sound you hear when you shut the motor off is likely to be your trim tabs retracting (if you have them). Many of them are wired to retract automatically on shut down.

I have trim tabs so that must be what it is. It seems like that would potentially spook fish if I pulled up on a good spot. Is there a way to stop it from doing that? Is it not loud enough to spook specks?

If the engine is tilted up or down fully the tilt pump may continue to run if a switch is corroded. A new tilt switch is less than $50, but you need to determine which one is faulty...the one on the binicle or engine.

Cut the power off to the engine so that it does not burn it up while unattended

yep, wet or dirty switch and DEF be sure to power down when not using

You either have a bad trim switch on your control or the trim relay under the hood has moisture in it.
