Default What to replace rack and pinion steering with??

My boat has twin I/O with rack and pinion steering. I think That I would like to free up som space behind the panel so that I can offset my wheel to one side. The only way I can see to do this is to replace the steering from the rack and pinion to something else. My question is there a way to do this without havin to replace that cable? What would be the easiest way to go? I was thinking of using a rotary box but it looks like it has 2 cables and I don't want to make a lot of mods. Just want the simplest thing. My boat does have power steering that is part of the engine and a actuator that the single cable goes into now.
