Not sure if your talking about the difference between the 3000 open (tiara) and 3000 express (pursuit). They are very similar but the pursuit is set up more for sishing. The open has an 11.5 beam which allows for a full 'u' shaped dinette and the tiara also has a bulkhead between the small galley/dinette and the forward berth. Engine differences as well but those were the major visual differences if I remember right. I never tested the open but the pursuit is a great one for a lot less money.
I think you're talking about the Tiara 3100 Open and the Pursuit 3100 Offshore. There is no Tiara Pursuit. Tiara's are built in Michigan and Pursuit's in Florida. Both are owned by S2 Yachts. Hulls are similar. Tiara's a side helm, great fit and finish. Pursuit's a center helm, good fit and finish, better than most. Both are good solid boats but as has been said, the Pursuit is probably geared a bit more for fishing. Take a look at both, I don't think you can go wrong with either. Pick the layout you like best. BTW, the Pursuit should be about 15% less, at least that's what they were new.
I can't really verify the exact model # of the Pursuit, but my investigation of boats for sale show these differences so far:
Tiara has L-Shaped companion seating Pursuit straight bench
Tiara has Transom Door, Pursuit Doesn't
Pursuit has a partition between salon and berth, Tiara has a curtain only
Looks like some different cockpit sole hatches in the pics, but can't determine what they are exactly.
Still looking for more differences. Not sure why its cheaper!
You know, if guys are selling their boats, you would think they know enough to write the correct model # of the their own boats on the ads, but no. I see tons of mistakes..... 31 tiara on post '92's
3100 on pre-92's...etc..... it screws up the search engines.
31 Pursuit was built between 1993 and 1997. Both the 31 Tiara and 31 Pursuit were built in Holland, Mi. The hulls are the same. The main difference is Pursuit has its deck on one level. Fuel in Pursuit had optional 256ga. instead of standard 206. Bait and tackle center behind helm seat. The interior difference was a U-shaped dinette.
The 31 Tiara was built from 1979 to 1992 then hull was changed from 1992-2004. Prop pockets were added and more deadrise gave the later models a better ride in a head sea.

Boatdiver is correct but to furthur complicate things, Pursuit made two 30 models then, offshore and express. Offshore had a 12' beam with a center helm. Express was a narrow beam (10'6) boat with a side helm.
What luckystar said is exactly correct. Basically when Tiara stopped making the original version (1979-1992) under the Tiara name, they continued to build the exact same boat but put it under the Pursuit name. Nice marketing eh?
In 1992 Tiara came out with a redesigned 3100 Open that was sold under the Tiara name.
