Replacing the back up solenoid for my trailer and my local store sold me one with the following specs:

800 PSI and 1/32" orifice.

When I got home my existing solenoid shows this
200PSI and 1/16" orifice.

Question: The solenoid opens and closes only. Does the PSI rating indicate what PSI it can withstand? What would the smaller orifice opening cause? Higher pressure?

The rating on the solenoid is the maximum it is designed for.
The smaller orifice should not affect the pressure, that comes from the master cylinder.
However because your master cylinder is trying to push a volume of fluid through a smaller orifice, it could affect the responsiveness of the braking system.
Depending on how conservative the brake designer is, it may not be a factor, BUT it could be a big factor.
I would recommend that you play it safe and get a solenoid that is the same size orifice wise.
