I'm running a 20' SeaOx with a 2005 Suzuki DF175. My prop is a worn 14-3/4 x 23p (suzuki) and only turns 5500-5600 rpm @ 50-52 mph. The motor should turn 6100 rpm, so I tried a 16 x 21.5p (suzuki) yesterday and it turned 5800 rpm @ 49 mph. Any recommendations as to what size wheel I should try next to get best whole shot and top end?

You're getting closer with the 16 x 21.5, but it sounds like the Suzuki 3 x 16 x 20 is what you need. Prop hole shot and top end are two different subjects. You want to prop your motor so it will turn at it's maximum rpms regardless.
