so whats the best fish you have ever had?
mine was a 12 lb king salmon that i caught last year and had my girl cook it up in the oven. it was awsome. i only like kings if i can catch them and eat them the same day

My favorite fish is Lake Erie yellow perch. My 2nd favorite was fried hogfish that I had down in Islamorada.

Pink mountain trout from the Maggie Vally area.
Gf before I moved from Lake Waccamaw. Use to swap with her father, catfish for those trout.. Gf lasted about 2 years but I really miss those fish her father use to bring down to me....:grin:
Permit, grilled w/ salt, pepper, and olive oil.

Barely blackened yellowfin. By barely, I mean rare inside with crisped up blackening seasonings on the outside.
Close second would be wahoo on the grill with some lime, adobo and fresh ground black pepper.

Blackfin tuna, caught by me and bled boatside. Wife slathered with EVOO, garlic and ginger, seared in a red hot cast iron pan, served with mashed sweet potato, papaya salad, plantain chips and a 2004 Don Melchor Cabernet.

Almost a tie, fried Grouper, grilled Pompano, or Tuna steak.
Had grilled Mahi at LBs in the Grand Casino (biloxi) a few years back, it was probably one of the best single servings of fish that I have ever had.

Cobia. Pulled him out of the water, filleted him 20 minutes later, put vegetable/olive oil on the filets, zatarains chicken breading. Put it on tin foil pan on top of the grill.
Amazing.

Basically all fried, but the Mahi and striper are also good poached, baked, etc. Maybe on of these day's I'll catch some interesting offshore fish. I like swordfish if it is about medium rare, inedible when overcooked.

The best fish is easily the gift from God -- tuna -- and it was meant to be caught, filleted, and eaten on the spot -- uncooked.
If we are talking best fish dish, I think wahoo is up there, Icelandic cod, sword fish, halibut all make excellent fish dishes and are better cooked than tuna. Don't get me wrong, tuna is good cooked, but like salmon, has a distinct flavor that narrows the variety of dishes.
A couple days ago cooked some cod Mediterranean style, in vinegar. It is now my fav fish dish.

I often just cook in the microwave. One time, I took the cod and cooked it in Paul Newman's Vinegar and Olive Oil dressing....that was all it needed and it was great!

Pompano. Had the pleasure of catching a few in the Port Aransas surf about a month ago. It was the whitest, tastiest fish I've ever had the pleasure of eating. Rubbed it down with butter, seasonings and lemon...baked til meat was flaky. MMMMMM damm good! :thumbsup:

Hard to beat fresh caught perch or walleye. Many ways to fix it , especially walleye, but I like beer battered the best or coated with Panko and deep fried.

Grills Riverside in Melbourne is just as good but the atmosphere at the Port is much better. I was there last weekend (3 days straight) and they are talking about building one in Tampa or Orlando. :grin:

Not necessarily the best but I did good Saturday evening.
Almost everybody knows that a wild caught salmon is somewhere between pink and red in flesh color, what everybody doesn't know is the best king salmon ( chinook salmon) is white. Something like 4% of the King Salmon are white and the best king salmon are caught in the wintertime.... the best salmon ever is a Winter White!
Friday evening I'm working late and the skipper of the boat I'm on gets a call, a beautiful, fresh 25 pounds white king was just unloaded from a troller, does he want it? He says yes ( probably cost him close to $10 a pound) and tells them to keep it on ice.
We work until 1:00 in the morning, midday on Thursday we set a 3500 pound Cummins on deck, maneuvered it through his freight door, across the freight room, and into the engine compartment. Before I left we had it sitting on its beds and aligned. He was pretty pleased and shared a chunk of that white king with my lady and I.
We make our own blackened redfish seasoning ( I've mentioned that elsewhere on this forum), I skinned the salmon, dried it, coated it with Virgin olive oil and then blackened redfish seasoning and laid it in a very hot frying pan. Because it was so thick I covered the pan, gave in about 4 min., and flipped it over, and gave it about 2 min., and then I turned off the heat and let it rest, covered for about 6 min.. I cut into it to serve it and the center was just a tiny bit translucent still ( under done is way better than overdone). Served it with squash and coleslaw.... damn that was good :) :thumbsup:

My husband's grilled marinated salmon--his secret recipe. It is so good that I don't eat salmon in restaurants because it won't be as good as my husband's salmon. I am spoiled!
Recently the guys next to our boat in slip caught 3 large stripers--largest was 44". We were so excited and impressed that they gave us one of the catch!!! We took it home to clean and cut up. My husband fried it--it was good but I think it would taste better grilled or broiled.

Wahoo, guess because for some reason they do not serve it in restaurants that often. One of the restaurants near our house in Charleston SC will have it on the daily menu during summer a lot of times(Sullivan's)

Our family's Christmas eve dinner follows a Polish tradition of a "no meat" 7 or 11 course dinner. We alternate years and this year was ours.
We made a Chilean Sea Bass over a ratatouille in parchment paper with an herb salad garnishing.
The sea bass was a 6 3/4 pound single fillet. It was the sweetest and most buttery fish I have ever had. It took up an entire large cookie sheet and was 4 inches thick in the belly. It was unbelievable.
The fish cost $120....It was worth it....

We all know you remember everything tasting much better when your wasted and starving. I believe this may be the case here, but I don't remember anything tasting better than a freshly caught and cooked snook at 3am. It's been years since I've had it, but I don't remember anything ever tasting better.
For what I have frequently...Gag, Red, Hogfish, Mangrove Snap, Red Snap, Mahi, Tuna. I believe I favor blackened mahi. Strangely, hogfish is lower on my list, maybe because I have it so often. The opposite is true for Mahi, usually only 4-5x a yr.

Best eaten out, Chinook salmon in a puffed pastry, smothered in lobster bisque, and I'm not a big fan of salmon as a rule. At home, hard to say, fresh bass, perch, or speckled trout fillets, salt, black and red pepper, seared in olive oil.

I eat a ton of dolphin, however, I don't think its the best quality fish. I eat it because it is fairly easy to catch a dinners worth.
