I typically don't see much freshwater talk going on here. This is mostly a salt-water forum. you may find someone to answer your question, but a different forum is probably better for your question.

there is a "great lakes" forum here on THT. Start there. Or, start reading some magazines on the subject. Two fisheries totally different. Trolling spoons off downriggers SOP for salmon, minnow- live bait fishing for perch.
Weclcome to the fascinating world of fishing!

Northern kings were my favorite for salmon on Lake Ontario and the west coast

Second choice was cut herring baits

Perch: Soft craws (Anybody got a source?)

Salmon: It's a secret.:jk:

Did you check that site I gave you?

Welcome to the HT Bagel 33,

Salmon trolling; flies, spoons, plugs, and cut bait deployed on downriggers; from divers such as Dipsy Divers; segmented leadcore and copper; from planer boards; lead balls (thumper rigs); or flatlined.

There are times when salmon and trout can be caught from shore and from piers. Casting spoons such as Krocodlies, Cleos, Mr. Champs, etc or fishing spawn, alewifes, or even marshmallows are popular in the fall.

Perch- small minnows or 1/2 of a nightcrawler fished near the bottom is a good starting point.

Good luck.
