Enough for four.

1) fry a half dozen slices of bacon; save the pig fat.
2) wash and slice two medium potatoes. Do not peel. Cut into quarter inch slices.
3) slice 2-3 medium onions as you did the potatoes.
4) chop two cloves of garlic.
5) cut up one anaheim pepper (a bell pepper will be ok) to one inch lengths.
6) cut up two medium carrots into one inch pieces; slice the "big ends" into thinner pieces.

In a pot of your choosing, pour in the bacon grease.
When it gets hot, add the potato slices.
In two minutes, add clam juice, enough to cover the potatoes.
In five minutes, add the onions, peppers and garlic.
Slow boil for about three minutes.
Add carrots.
Continue slow boil for five minutes.
Make sure there's enough clam juice to cover the ingredients. If not, add either clam juice or chicken stock. Water will do in a pinch. You'll just need to add more seasoning.
(While I'm on that...give it a taste test every five minutes; do not overseason)

Then:
add four cans of Snow's chopped clams, a quarter pound of frozen crawdads (aka crayfish), available at Super Wal Marts, and a half pound of blue crab CLAW meat.

Reduce heat to a simmer.

Crumble the bacon, and drop into the pot.

Sprinkle in some thyme, salt, pepper, and a seasoning of your choice (Old Bay, for example).

Give it about 5-10 minutes, turn heat off, and let set (covered) for 10-15 minutes.

Serve. Enjoy.
